Chef Luis Javier Nájera Sánchez leads the culinary and in-house experience at Hacienda Tres Marias with a philosophy rooted in origin, authenticity, and connection to the land. Passionate about “farm-to-table” cuisine, he understands the natural cycle of the earth, carefully selecting wild, local, and organic ingredients that celebrate raw and honest flavors.
His kitchen is a blank canvas — guided not by rigid recipes, but by daily inspiration and the freshest products available. Every dish tells an ephemeral and memorable story, blending traditional techniques such as slow braising, open-fire cooking, and smoking methods with a contemporary, intuitive approach to gastronomy.
